Spring is here, or not, I really can’t tell anymore. Some days are bright, sunny, and the trees look like they are ready to burst. Then, other days it is cold, blistery, and snowing again. This yo-yo weather has done a yo-yo on my mood and I am ready for warmer weather and beautiful blooms to brighten my day.
While waiting for Nature to make up it’s mind, I decided to meal prep a few breakfast items for “on-the-go” days.
Each of these breakfast items are freezable. In this crazy, hectic world, freezable is your friend. Not to mention you get a longer shelf life, and save money by stopping the temptation of going through the fast food joints.

The Hardy 5-Ingredient Breakfast Burrito
These tortilla wrapped, hearty, protein packed burritos are sure to satisfy your morning hunger and keep you full through the early hours. Packed with egg, sausage, cheese, and green chilies for a boost of flavor, they are great to freeze. Just wrap individually with plastic wrap and pop them into a marked freezer bag. Now when you need a quick, hardy breakfast, take one (or two) out and pop them in the microwave for a quick reheat! Simple 🙂
Chewy Cranberry Almond Granola Bars
Packed with protein and grains this recipe is sure to please. Chewy granola with tart cranberries and crunchy almonds satisfies the morning cravings. The added bonus of flax and chia seeds gives this recipe a healthy boost. Top them with a greek yogurt icing or leave them plain. Throw them in the freezer for long term storage and take one out at a time for a tasty treat!
Health-Conscious Double Lemon Scones
Nothing says SPRING to me quite like lemon. The bright citrus flavor brings happy thoughts and images of sunny days. These delectable scones are made with flax instead of egg for added nutrients and reduced cholesterol, coconut oil instead of canola, and a greek yogurt lemon icing to top off these citrusy delights. Nix the copious amounts of butter found in traditional scones, these healthier morsels are still the dense cake texture you know and love and plenty flavorful.
